The Unterschwarzach has its own organic farm on the mountain, at 1300 m above sea level, the highest in the Glemmtal Valley, lovingly run by the Hasenauer family, whose links to the region and roots and values are obvious here.

 

Our roots and values

Our farm with stables is located in an area of Alpine pastures on the Zwölferkogel in Hinterglemm, where Anton Hasenauer’s Pinzgau cows graze on lush meadows in summer and are fed with the best hay in winter. Keeping horses correctly is something that is dear to the heart of Toni, the hotel boss and farmer.

Those who recognise quality appreciate the range of fresh produce that comes from our own organic farm. Fresh hay-milk from Pinzgau cows, butter and cheese, fresh eggs every day from free range hens, and of course the high-quality, delicious organic meat from our own cattle are used as ingredients for wonderful meals in our 4 star wellness and family hotel and also in the restaurant “der Schwarzacher”.

Sustainability and regionality as important ingredients

At the Unterschwarzachhütte there are other things that come from the locality and are used at the Unterschwarzachhof, for example the wood for the wood pellet heating system at the 4 star superior hotel in Hinterglemm comes from our own woodland. Wood pellets are a sustainable raw material compared to fossil fuels and are consequently far more environmentally friendly. We like to consider our future generations.

Animals on the farm – A paradise for families

All our guests, whatever their age, are always very welcome to come and see what goes on on a daily basis in the barn and up on the Alm, and can help with milking the cows, making butter and so on. The natural Alpine herbs of this mountain region can easily be tasted in our organic milk, organic meat, and organic butter.

Children and families love our mini farm with petting zoo when on family holidays at the Unterschwarzachhof. Children can groom the ponies and alpaca, and stroke the many rabbits, guinea pigs, and pampered cats. Family holidays can be made all the more memorable by taking up guardianship of an animal during a holiday.

Alpine breakfast at the organic farm

In summer, as guests of our 4 star superior hotel Unterschwarzachhof head up to the farm on the Alm with host Jacky, they are on their way to a lovely experience: an Alm breakfast. Enjoy being pampered in a culinary way in a fabulous mountain setting in fresh mountain air, surrounded by lush Alpine pastures where Toni’s cattle are grazing.

Toni is only too happy to introduce guests to the art of milking on their visit to the organic farm, and Jacky makes home-made organic butter with you in the Unterschwarzachhof’s wonderful cheese dairy.

Enjoy celebrations in the cosy environment of our organic farm’s cheese dairy

The cheese dairy makes a wonderful place for smaller, cosy celebrations. There is room for up to 35 people in the homely, traditional “Stube” room where we can serve you with Pinzgau “Hutessen” (min. 15 pers.), hearty Alpine snacks, or other specialities that are bookable in advance. A really atmospheric venue for lovely celebrations together.

Pinzgau cattle farming in Saalbach Hinterglemm

The wonderful, sturdy Pinzgau breed of cattle is farmed with tradition and conviction at the Unterschwarzachhof.

We have about 45 cattle here at our organic farm in Saalbach Hinterglemm, of which

  • Up to 20 are Pinzgau dairy cows
  • One is a Pinzgau bull, ensuring further breeding takes place
  • And calves

Information about Pinzgau cattle

Pinzgau cattle are a sturdy, down-to-earth, capable type of mountain farm cattle, easily recognisable by their typical chestnut brown colour and white stripes on their backs and legs. The name comes from where the breed comes from, the Pinzgau region (the Zell am See district) in Salzburger Land.

The high milk production and the adaptability of Pinzgau cattle makes them ideal for breeding, though Pinzgau cattle are also very popular for the quality of their meat.

The organic produce of our farm appears on the menu of 5 different eateries and restaurants and can be enjoyed on the sun terrace too.
